Espresso Ratio: Complete Guide for Ristretto, Espresso, and Lungo

The brew ratio is the variable that separates a concentrated, vibrant espresso from a watery, flat one — or from a lungo with more volume but less intensity. Yet it remains one of the least understood variables among those starting out with home espresso.
What is the ratio in espresso?
The brew ratio is the relationship between the dose of ground coffee and the weight of extracted liquid. It is expressed as 1:X.
If you use 18 g of coffee and get 36 g of espresso in the cup, your ratio is 1:2. If you get 27 g, the ratio is 1:1.5. If you get 54 g, it is 1:3.
The weight of the liquid, not the volume, is what matters. Espresso contains oils, emulsions, and dissolved CO₂ that cause the volume to vary even with the same weight. Weighing the output is the only way to control this variable with precision.
How ratio defines concentration
Coffee contains hundreds of soluble compounds: organic acids, sugars, oils, melanoidins, and caffeine. When pressurized water passes through the puck, it dissolves and carries these compounds into the cup.
With a low ratio (1:1.5), the water extracts a fraction of the available compounds but concentrates them in a small amount of liquid. The result is dense, viscous, and intensely flavored.
With a high ratio (1:3 or more), the water extracts more total compounds but dilutes them across a greater volume. The result is longer, with more physical body but less flavor concentration per sip.
What ratio does not directly control is which compounds are extracted — that is governed by grind size, temperature, and time. Ratio defines how concentrated what was already extracted becomes.
The three reference styles
Ristretto: 1:1 to 1:1.5
Ristretto is the most concentrated style. With 18 g of coffee and an extraction that stops at 18–27 g of liquid, the result is a short, dense drink whose intensity can be overwhelming out of context.
Well-executed ristrettos are sweet and full-bodied. Poorly executed ones are aggressive and one-dimensional. This style requires a finer grind or a shorter extraction time to avoid over-extraction.
It is the common base for cortados and concentrated espresso in milk drinks.
Standard espresso: 1:2 to 1:2.5
The most universal range. With 18 g of coffee and 36–45 g in the cup, standard espresso balances concentration and intensity.
In this range, crema is maintained, moderate bitterness integrates well with acidity, and the origin characteristics of the coffee can come through. It is the reference point for any dialing-in session.
If you are working with a light roast or a washed process coffee, targeting 1:2.5 tends to open up the acidity and fruity profile of the bean. With darker roasts, 1:2 or less better preserves body and sweetness.
Lungo: 1:3 to 1:4
The lungo doubles or triples the extracted volume compared to a ristretto. In terms of concentration, the difference is significant: the drink is more fluid, less dense, and with a more diffuse flavor.
What many people don't anticipate is that a lungo with the wrong grind can taste bitter and over-extracted. The larger amount of liquid does not dilute the bitterness if the extraction has already pulled too many bitter compounds. For a balanced lungo, the grind is usually opened slightly to control the flow rate and prevent this problem.
How to adjust ratio in practice
Ratio is controlled by stopping the extraction at the right moment. The machine — or the barista manually — cuts the flow when the weight in the cup reaches the target.
- Fix your dose. The amount of coffee in the portafilter is your base. For home espresso, 18 g is the most common starting point.
- Define your liquid target. Multiply the dose by the desired ratio: 18 g × 2 = 36 g of espresso.
- Monitor with a scale. Place the cup on a scale before pulling the shot. Stop the extraction when the weight reaches your target.
- Evaluate the result. If the espresso tastes under-extracted — sour, lacking sweetness, thin body — consider widening the ratio to 1:2.5 before touching the grind.

Interaction with other variables
Ratio does not operate in isolation. Its effects change depending on the context of the other variables:
- Finer grind + high ratio: greater risk of over-extraction and pronounced bitterness.
- Coarser grind + low ratio: greater risk of under-extraction and sour, sharp acidity.
- High temperature + low ratio: very concentrated extraction with over-extraction risk in the final phases.
- Light roast coffee: benefits from wider ratios (1:2.5 to 1:3) to develop acidity and fruity aromas.
- Dark roast coffee: better at short ratios (1:1.8 to 1:2.2) to preserve body and sweetness.
Water hardness also plays a role: water with high mineralization (high GH) often requires slightly wider ratios to balance the perception of body.
When to adjust ratio vs. grind
Ratio and grind are the two primary levers in espresso, but they serve different roles:
Grind controls extraction time. If the shot runs too fast or too slow, grind is the variable to adjust. A finer grind slows the flow; coarser speeds it up.
Ratio refines final concentration. Once the flow is properly calibrated and the time is right, if the espresso still tastes too intense or too light, ratio is the variable to move. It is the fine-tuning adjustment, not the structural one.
In practice, the standard dialing-in sequence is: first adjust grind until you get the correct extraction time (25–30 seconds for a standard 18 g espresso), then refine the ratio to adjust concentration to your preference.
