Ratio in V60: How to Find the Balance Between Concentration and Intensity

The Ratio in V60: the Variable That Controls Concentration

The ratio in V60 defines how much water you use per gram of coffee. It is the variable that determines the concentration of the brew: how intense, full, or open the cup turns out.

Unlike grind or temperature, the ratio does not fundamentally alter which compounds are extracted. It does not change the acids present in the coffee or the compounds responsible for bitterness. What it does is dilute or concentrate everything the extraction releases into the water, amplifying or attenuating each sensory element proportionally.

This makes it a refinement variable: once extraction is well calibrated with grind and time, the ratio lets you adjust intensity without touching anything else.


Reference Range in V60

The typical range for V60 moves between 1:13 and 1:17 (grams of coffee per grams of water).

  • 1:13 – 1:14: concentrated cup. Pronounced body, intense flavors. Useful for coffees with strong character or as a base for milk drinks. The risk is that defects — bitterness, astringency — appear more amplified if extraction is not dialed in.
  • 1:15: the most widely used reference point. Balanced extraction across most origins and roast levels. The Specialty Coffee Association (SCA) considers it the center of the optimal window for filter coffee.
  • 1:16 – 1:17: more open cup, with greater clarity. Fruity acids and aromatic complexity from high-altitude origins express themselves better. Body decreases. Beyond 1:17, the risk of a flat or watery cup increases if extraction is not well calibrated.

Sensory Effect of the Ratio

Concentration and Body

The most direct effect of the ratio is on concentration: a shorter ratio produces a beverage with more dissolved solids per milliliter. Body increases because there is more dissolved material in less water volume.

A longer ratio dilutes the brew. Body decreases and the mouthfeel becomes lighter. If the ratio is excessively long without compensating with other parameters, the cup can end up flat.

Acidity, Sweetness, and Bitterness

The ratio does not change which compounds are extracted, but it does determine how much weight each carries in the final profile.

Short ratio: all flavors concentrate. If extraction is correct, sweetness and acidity are present with more intensity. If there is over-extraction, bitterness and astringency also concentrate.

Long ratio: the profile opens up. Acidity can seem cleaner and more structured because body no longer masks it. But if extraction is low, the cup ends up flat and unstructured.

Interaction with Roast Level

Roast level amplifies the effect of the ratio:

  • Light roast: ratios of 1:15 to 1:16 usually work well because the coffee already has high solubility and pronounced acidity. A very short ratio can make the cup too intense and obscure the fruity acidity that characterizes these coffees.
  • Dark roast: shorter ratios — 1:13 or 1:14 — are more common. The coffee has lower cellular density and dissolves faster. A long ratio can result in a watery cup with dominant bitterness.

The Ratio Also Affects Extraction

The ratio in V60 has a secondary effect on extraction that is not always mentioned: more water not only dilutes the brew, but also carries more solubles out of the coffee.

With more total water passing through the bed, extraction tends to rise slightly. Not as much as moving the grind several steps, but enough that a ratio of 1:17 with a fixed grind extracts somewhat more than 1:13 with the same parameters.

This has practical consequences: if you increase the ratio to open up the cup and find it slightly bitter, it is not only because of concentrated bitterness — the extraction may have also risen. The typical solution is to grind one step coarser when working with higher ratios.

The inverse also applies: with short ratios, if the cup lacks sweetness or tastes flat, it may be that extraction is insufficient for the amount of coffee. Grinding finer or raising temperature compensates for the reduced water volume.


Ratio and Extraction Time

In V60, the total pour time is closely linked to the ratio. More total water means more total pour time, which also influences extraction.

With a standard technique — bloom with 30–40 ml followed by 2–3 pour stages — total time typically falls in these ranges:

Recommended Starting Point

If you are dialing in a new V60 recipe, the most reliable starting point is:

  • Ratio: 1:15
  • Grind: medium-fine range (55–70 in the simulator)
  • Temperature: 92–94 °C for medium roast, 94–96 °C for light roast

From there, move the ratio in 0.5 steps to adjust intensity without losing extraction balance. If the cup is well extracted but too intense, move up to 1:16. If it is open but lacks body, move down to 1:14.
